What we commonly know as Sev Puri in Mumbai is known as Papdi Chaat in Delhi. It is similar but not the same.
Papdi Chaat as the name suggests has lots of papdis, tossed in a blend of chutneys, curds and potatoes. Mix the papdis, chutneys and curds the way you want.

- To make papdi chaat, coarsely crush 7 papdis and arrange them on a serving plate.
- Top it with ¼ cup potatoes, ¼ cup curds, 2 tbsp khajur imli ki chutney and 1½ tbsp green chutney.
- Sprinkle a little salt, ¼ tsp chaat masala, ¼ tsp cumin seeds powder and ¼ tsp chilli powder over it.
- Repeat steps 1 to 3 to make 3 more plates of papdi chaat.
- Serve the papdi chaat immediately garnished with coriander and sev.

In many street side papdi chaat, the vendor puts urad dal pakoris that are similar to the urad dal vada (bhalla) made for the dahi vada. While we haven’t added them in this recipe of papdi chaat, if you wish to add then refer this recipe of. Deep-fry the vadas, soak them in water and squeeze & place over the papdi. Drizzle with curd, chutney and serve!

To make a spicier papdi chaat, add Lehsun ki Chutney
We will be making use of boiled potatoes. Using a pressure cooker or microwave, boil 2 medium sized potatoes.
Cool slightly, remove the skin and discard it.
Chop them and keep aside.
We will be using homemade thick curd, just whisk it using a wired whisk to make it smooth. To make fresh homemade curd, refer our recipe with detailed step by step photos and learn. You can add powdered sugar to the curd and mix, if you prefer a mildly sweet curd.
Assemble all the ingredients for the dahi papdi chaat.
For making the papri chaat, take 7 papdis and coarsely crush them.
Arrange the crushed papdi on a serving plate.
Top it with ¼ cup potatoes.
Drizzle around ¼ cup curds. Papdi chaat tastes better with chilled yogurt so, refrigerate it for a while before adding.
Top with 2 tbsp khajur imli ki chutney.
Also, drizzle 1½ tbsp green chutney. The quantity of all the chutneys have to be adjusted as per your preference.
Sprinkle a little salt, ¼ tsp chaat masala.
Also, sprinkle ¼ tsp cumin seeds powder.
Finally, sprinkle ¼ tsp chilli powder over it.
Garnish with coriander.
Also, sprinkle the sev and our papdi chaat is ready to serve.
Serve the papdi chaat immediately or else it will turn soggy. Repeat steps 6 to 17 to make 3 more plates of Indian papri chaat.
