What we commonly know as Sev Puri in Mumbai is known as Papdi Chaat in Delhi. It is similar but not the same.

Papdi Chaat as the name suggests has lots of papdis, tossed in a blend of chutneys, curds and potatoes. Mix the papdis, chutneys and curds the way you want.

For Papdi Chaat
28 papdis
1 cup boiled , peeled and chopped potatoes
2 cups whisked curds (dahi)
8 tbsp dates (khajur) ki chutney
6 tbsp green chutney
salt to taste
1 tsp chaat masala
1 tsp cumin seeds (jeera) powder
1 tsp chilli powder

For The Papdi Chaat Garnish
2 tbsp finely chopped coriander (dhania)
4 tbsp sev

    For papdi chaat
  1. To make papdi chaat, coarsely crush 7 papdis and arrange them on a serving plate.
  2. Top it with ¼ cup potatoes, ¼ cup curds, 2 tbsp khajur imli ki chutney and 1½ tbsp green chutney.
  3. Sprinkle a little salt, ¼ tsp chaat masala, ¼ tsp cumin seeds powder and ¼ tsp chilli powder over it.
  4. Repeat steps 1 to 3 to make 3 more plates of papdi chaat.
  5. Serve the papdi chaat immediately garnished with coriander and sev.

It is made using an assortment of ingredients like chutneys, spices, crunchy bites like sev, papdi, puri, boondi etc. The best part about chaat recipes is that you can pre-prep before serving and just toss them everything before eating and all the flavours can be adjusted to suit your palate. This makes chaat recipes an ideal during parties and get togethers. Below are some of the popular chaat recipes :

Papadi chaat recipe notes:

  1. In many street side papdi chaat, the vendor puts urad dal pakoris that are similar to the urad dal vada (bhalla) made for the dahi vada. While we haven’t added them in this recipe of papdi chaat, if you wish to add then refer this recipe of. Deep-fry the vadas, soak them in water and squeeze & place over the papdi. Drizzle with curd, chutney and serve!
  2. If you want to make a healthier version of North Indian papdi chaat, then make it using Baked Papdis and Low Fat Curds. You can even add pomegranate, boiled chickpeas, mixed sprouts etc to make a healthy papdi chaat.
  3. While readymade papdi are available in local farsaan stores and supermarkets, you can even make them at home using our recipe for. Papadi being the most important ingredient of the recipe, it is important to use fresh & crunchy papdis. Avoid the rancid smelling, old papdis.

To make the Delhi papdi chaat recipe:

  1. We will be making use of boiled potatoes. Using a pressure cooker or microwave, boil 2 medium sized potatoes.
  2. Cool slightly, remove the skin and discard it.
  3. Chop them and keep aside.
  4. We will be using homemade thick curd, just whisk it using a wired whisk to make it smooth. To make fresh homemade curd, refer our recipe with detailed step by step photos and learn. You can add powdered sugar to the curd and mix, if you prefer a mildly sweet curd.
  5. Assemble all the ingredients for the dahi papdi chaat.
  6. For making the papri chaat, take 7 papdis and coarsely crush them.
  7. Arrange the crushed papdi on a serving plate.
  8. Top it with ¼ cup potatoes.
  9. Drizzle around ¼ cup curds. Papdi chaat tastes better with chilled yogurt so, refrigerate it for a while before adding.
  10. Top with 2 tbsp khajur imli ki chutney.
  11. Also, drizzle 1½ tbsp green chutney. The quantity of all the chutneys have to be adjusted as per your preference.
  12. Sprinkle a little salt, ¼ tsp chaat masala.
  13. Also, sprinkle ¼ tsp cumin seeds powder.
  14. Finally, sprinkle ¼ tsp chilli powder over it.
  15. Garnish with coriander.
  16. Also, sprinkle the sev and our papdi chaat is ready to serve.
  17. Serve the papdi chaat immediately or else it will turn soggy. Repeat steps 6 to 17 to make 3 more plates of Indian papri chaat.
