To Be Mixed and Grounded Into A Paste
100 gms fried onions
2 tsp chopped ginger (adrak)
6 to 7 garlic (lehsun) cloves
4 to 5 whole dry kashmiri red chillies
1/2 cup chopped mint leaves (phudina)
3 tbsp chopped coriander (dhania) leaves
1 stick of cinnamon (dalchini)
2 to 3 cloves (laung / lavang)

Other Ingredients
2 cups long grained rice (basmati)
3 green chillies , chopped
1/4 cup cauliflower florets
50 gms chopped carrot
1/2 tsp nutmeg (jaiphal) powder
1/4 cup ghee
4 cups coconut milk
salt to taste

For Garnishing
4 tbsp chopped coriander (dhania) leaves
80 gms fried cashewnuts (kaju)
200 gms fried onions
  1. Clean, wash and soak the rice in enough water for 20 min.
  2. Combine the vegetables with prepared masala and mix well. Keep aside.
  3. Heat ghee in a pressure cooker and add the vegetables.
  4. Saute for 3 minutes.
  5. Add the nutmeg powder and drained rice. And saute for more 3 minutes.
  6. Ad the remaining ingredients and mix well.
  7. Pressure cook for 2 to 3 whistles, or till the rice is cooked.
  8. Allow the steam to escape before opening the lid.
  9. Serve hot garnished with coriander, cashews and onions.
