Vibrant, green palak dotted with succulent, white paneer is a lovely sight to behold, and an even tastier treat to devour. The process of blanching, pureeing and cooking the spinach with spice powders becomes really quick and easy with our handy helper, the microwave oven! A dash of fresh cream not only balances the nutty flavour of spinach beautifully, it also gives the Paneer Palak a fantastically rich texture. Enjoy hot Paneer Palak with fresh Moghlai Roti or Naan .

Ingredients

for microwave palak paneer

4 cups chopped spinach (palak)

1 cup paneer (cottage cheese) cubes

2 tbsp oil

1/2 cup finely chopped onion

1/2 tsp ginger (adrak) paste

1 tsp green chilli paste

1 tsp coriander (dhania) powder

1/4 tsp turmeric powder (haldi)

1 tsp green chilli paste

2 tbsp fresh cream

salt to taste

Method

For microwave palak paneer

Put the spinach in a microwave safe deep bowl and microwave on high for 2 minutes.
Cool slightly and blend in a mixer to a smooth purée and keep aside.
Combine the oil, onion, ginger paste and green chilli paste in a microwave safe bowl, mix well and microwave on high for 2 minutes.
Add the spinach purée, paneer, coriander powder, turmeric powder, garam masala, fresh cream and salt, mix well and microwave on high for 3 minutes.
Serve hot.

paneer palak in a microwave.. wow thats nice and very quick.. saute mix and microwave for 3 minutes.. and its ready.. i often make this recipe.. as it is really very quick to make. thank you for this recipe.
