Heat a non-stick tava (griddle) and cook each paratha, using ¼ tsp of oil, till golden brown spots appear on both the sides. Allow the parathas to cool completely, wrap in an aluminium foil and pack in a tiffin box.

  1. In a deep bowl put 1/2 cup grated paneer (cottage cheese).
  2. Add 1/2 cup finely chopped spring onions (whites and greens).
  3. Add 3/4 cup whole wheat flour (gehun ka atta).
  4. Add 1/2 tsp  finely chopped green chillies or green chilli paste.
  5. Add salt to taste. We added 1/4 tsp salt.
  6. Add pepper powder to taste.
  7. Add enough water to make a soft dough. We added 2 tablespoons water.
  8. Knead into a soft dough.

  1. Divide the dough into 8 equal portions.
  2. Take a portion of the dough and flatten it on the rolling board and dust with flour.
  3. While rolling the paratha, rotate and dust with flour.
  4. Roll each portion into a 125 mm. (5") diameter circle using a little whole wheat flour for rolling.
  5. Heat a non-stick tava (griddle) and grease with oil.
  6. Put rolled paratha on tava.
  7. Cook  on  hot non-stick tava (griddle)  on medium heat for 30 to 45 seconds.
  8. Grease paratha with oil.
  9. Flip over and cook the other side.
  10. Always use a spaltula and press down while cooking the paratha. This must be done all over the paneer spring onion paratha as we want all sides cooked evenly. 
  11. Keep cooking and flipping for a few second. Cook till golden brown. Yout paratha is ready.
  12. Place paratha is serving bowl.
  13. Serve hot.
