In a deep bowl, add 1 cup grated cauliflower. Cauliflower is a low-carb and low-calorie vegetable, making the paratha a more nutritious option. The grated cauliflower cooks within the paratha, adding a satisfying bite and a pleasant floret-like texture that complements the soft dough.

Add ¼ cup finely chopped onions. The crunch of finely chopped onions provides a delightful textural contrast to the soft cheese and slightly firmer cauliflower.

Add ½ cup diced mozzarella cheese.

Knead into a soft dough.

Divide and roll into 6 equal portions.

- In a small bowl, combine 2 tbsp of whole wheat flour (gehun ka atta).
- Add ¼ cup water.
- Whisk well and keep aside.

Roll a portion of the dough into a 225 mm. (9 inch) diameter circle using a little whole wheat flour for rolling.

Place a portion of the cheesy cauliflower stuffing in the center of the circle.

Fold 2 opposite corners of the circle over the filling, overlapping them slightly.

Now apply little prepared wheat flour paste using a brush.

Now fold the remaining 2 sides of the circle to seal the stuffing well and form an envelope.

Heat a non-stick tava (griddle) and cook the paratha.

Using 1 tsp butter.
-
Till golden brown spots appear on both the sides.

Repeat steps 3 to 7 to make 5 more parathas.
