To make besan paratha, combine all the ingredients in a deep bowl and knead into a dough using approx. ½ cup of warm water. Cover and keep aside for 20 minutes. Keep aside. Knead the dough well and divide the dough into 6 equal portions. Keep aside. Roll a portion of the dough into a 75 mm. (3") diameter cylindrical paratha using a little whole wheat flour for rolling. Brush with a little oil and seal up the paratha in a flat ball. Roll it up tightly and again from one end to the other end to form a swiss roll and seal the open end tightly at the bottom in the centre. Again roll the dough into a 150 mm. (6") diameter circle using a little whole wheat flour for rolling. Heat a non-stick tava (griddle) and cook the paratha on it, using little oil, till it turns golden brown in colour from both the sides. Repeat steps 2 to 6 to make 5 more parathas. Serve immediately.

Besan has a rich and appetising aroma and is often used for binding or to make sweets. However, we have innovatively used roasted besan along with taste givers like ginger-green chilli paste to make besan ke paratha.

The addition of mint and coriander gives the masala besan paratha a flavourful boost. A bowl of dahi and aam ka achar is a true wholesome desi meal.

Health conscious can reach out for zero oil bean paratha. This simple yet tasty paratha is loaded with fibre and vitamin B complex. You just need to make sure that you serve this fat free paratha immediately on preparation, while it is still fluffy and soft, as it tends to get dry upon cooling. Serve with fatless maa ki dal or rajma saagwala or just plain low fat curds.

Tips for besan paratha. 1. Use warm water to knead the dough. This helps to make parathas soft. 2. Also oil your hands to knead the dough for smoothening after 20 minutes of resting time as besan tends to stick to your hands. 3. Use enough wheat flour for rolling as besan tends to stick while rolling too.

What is besan paratha made of?

    1. For the dough of besan paratha, in a deep bowl add 1 cup besan (Bengal gram flour).

    2. Add 1 cup whole wheat flour (gehun ka atta).

    3. Add 1/4 cup finely chopped mint leaves (phudina) leaves.

    4. Add 1 tbsp chilli powder.

    5. Add 1/2 tsp asafoetida (hing).

    6. Add 2 tsp finely chopped ginger (adrak).

    7. Add 1 tsp cumin seeds (jeera).

    8. Add 2 tbsp chopped coriander (dhania).

    9. Add 3 tbsp oil.

    10. Add salt to taste.

    11. Add warm water gradually to make a dough.

    12. Mix well. Oil your hands to knead the dough as besan tends to stick to your hands.

    13. Add warm water gradually knead into a soft dough is done. We used about 1/2 cup warm water.

    14. Cover the dough for 20 minutes.

    16. Divide the dough into 6 equal portions.

    2. Flatten it and Dust it with whole wheat flour (gehun ka atta).

    3. Roll into a small thick oval of 3 inches.

    4. Put a little bit of oil on the paratha.

    5. Seal up the paratha in a flat ball.

    7. Again roll out paratha with help of whole wheat flour (gehun ka atta) to 6 inches.

    1. Heat a non-stick tava (griddle) and grease with oil. Put rolled paratha on tava.

    2. Let it  paratha cook on medium flame for 1 to 2 minutes and grease with oil.

    3. Flip over and cook the other side of paratha

    4. Put 1 tsp oil over the paratha and spread with spatula.

    5. Press down with spatula on the paratha all over to ensure uniform cooking. Flip over and your besan paratha is ready.

    6. Repeat steps 4 to 7 to make 5 more parathas.

    1. Divide the stuffing into 5 equal portions. Keep aside.

    2. Divide the dough into 5 equal portions.

    3. Roll a portion of the dough into a 150 mm. (6") diameter circle using a little whole wheat flour for rolling.

    4. Spread one portion of the stuffing in an even layer on the circle.

    5. Roll it up tightly.

    6. And again from one end to the other end to form a swiss roll.

    7. And seal the open end tightly at the bottom in the centre.

    8. Turnover the swiss roll so that the sealed side faces upwards and again gently roll into a 125 mm. (5”) diameter circle using a little whole wheat flour for rolling.

    9. Place the paratha on a non-stick tava (griddle). Turn over in a few seconds. Cook the other side for a few more seconds.

    10. Lift the paratha with a pair of flat tongs and roast over an open flame till brown spots appear on both the sides.

    11. Repeat steps 3 to 8 to make 4 more zero oil besan parathas | healthy zero oil besan paratha.

    12. Serve zero oil besan paratha | healthy zero oil besan paratha | immediately.

This zero oil roti using besan as a stuffing is unusual and very tasty but to serve just immediately is v imp otherwise it taste dry as there is no oil.
