A rice delight that is loaded with veggies and flavoured subtly with a fine choice of spices, the Vegetable Pulao is one dish that is famous all over the world. Within India too, it is so popular that there are umpteen versions, ranging from mild to spicy, and it is available in even tiny restaurants and roadside eateries!
This Vegetable Pulao is a Quick Recipe and easy to make, but very tasty, with the added flavours of ginger, green chillies and garam masala. Prepare it as close to serving time as possible so that the flavours are fresh and strong.
If you don't like your to eat your pulao plain, have it with Makhni Gravy or Kadhi.

- To make vegetable pulao, soak the rice in enough water for 30 minutes, drain well and keep aside.
- Heat the oil in a pressure cooker, add the onions, bayleaf, cinnamon and cloves and sauté on a medium flame for 1 minute.
- Add the soaked rice and mixed vegetables, mix well and cook on a medium flame for 1 minute, while stirring continuously.
- Add the green chillies, ginger, garam masala, 2½ cups of hot water and salt, mix well and pressure cook for 2 whistles.
- Allow the steam to escape before opening the lid.
- Serve the vegetable pulao hot garnished with coriander.

For the Vegetable pulao recipe, we will first rinse the rice under running water. Wash until the starch runs out and you get clear water. This helps in getting separate rice grain after cooking.
Soak 1 cup of rice in enough water for 30 minutes.
After an hour, drain well with the help of a strainer.
For the veg pulao recipe, take a pressure cooker. Put the oil to it and heat it over a medium flame.
Now we will add the Khada masalas. Khada Masala is a Hindi term for whole spices. In this recipe we have used bayleaf.
Also, we will add the cinnamon and cloves. Sauté on a medium flame for 30 seconds till they start crackling.
Add the onions and sauté on a medium flame for 1 minute.
Add the chopped green chilli.
Add the grated ginger. Alternatively, you can even use ginger-green chilli paste.
Sauté on a medium flame for one minute or till the raw smell goes away.
Add the chopped French beans and carrots. You can use any vegetables of your choice for the Vegetable Pulao. Use more seasonal vegetables as the fresh vegetables are loaded with nutrition.
Now, add the green peas.
Add the garam masala and salt to taste.
Add the drained rice, mix gently and cook on a medium flame for 1 minute, while stirring continuously.
Add 2 cups of hot water and mix well. Taste the water for salt and spices.
Cook on a medium flame for 2 whistles. Allow the steam to escape before opening the lid.
Give your Vegetable Pulao a gentle stir with a spatula.
Serve the vegetable pulao hot with curds and papad as accompaniments.
