Carrot and Moong Dal Pulao, also affectionately known as Gajar Moong Dal Pulao or simply Vegetable Moong Dal Pulao, is a wholesome and comforting one-pot meal that's both flavorful and easy to prepare. This delightful dish combines the sweetness of carrots with the earthy goodness of moong dal, all cooked together with fragrant rice and aromatic spices. It's a perfect meal for a busy weekday or a light weekend lunch, offering a balanced and satisfying experience.

 

The foundation of this aromatic pulao lies in its simple yet potent blend of spices. You start by heating 1 tablespoon of oil in a pressure cooker. Once hot, whole spices like 2 cloves (laung/lavang), a 25 mm (1 inch) stick of cinnamon (dalchini), and 1 bay leaf (tejpatta) are added. These are sautéed on a medium flame for just a few seconds to release their enticing aromas. Following this, 1/2 cup of finely chopped onionand 1 1/2 teaspoons of chilli powder are introduced, sautéed for about a minute until the onions soften and the chilli powder blooms in the oil, forming a fragrant base.

 

Next, the star ingredients make their entrance. 1 cup of chopped carrot adds a touch of natural sweetness and vibrant color, while 2 tablespoons of green moong dal (split green gram), which has been washed and drained, contributes a pleasant texture and a boost of protein. 1 cup of rice (chawal), also washed and drained, forms the bulk of the pulao. These ingredients are added to the cooker along with salt to taste and 2 cups of water. Everything is then mixed well to ensure all components are evenly distributed and coated with the aromatic spices.

 

The beauty of this recipe lies in its efficiency, thanks to the use of a pressure cooker. After mixing all the ingredients thoroughly, the cooker is closed, and the pulao is cooked for 2 whistles on a medium flame. This method ensures that the rice and moong dal cook perfectly, becoming tender and fluffy without being mushy. The pressure cooking process also helps the flavors meld together beautifully, creating a harmonious and delicious outcome.

 

Once the pressure cooker has whistled twice, it’s essential to allow the steam to escape naturally before carefully opening the lid. This step is crucial for both safety and for allowing the pulao to settle, resulting in distinct grains of rice and perfectly cooked dal and vegetables. When you open the lid, you’ll be greeted with the inviting aroma of spices, sweet carrots, and wholesome moong dal.

  1. Heat the oil in a pressure cooker, add the cloves, cinnamon and bayleaf and sauté on a medium flame for a few seconds. Add the onions and chilli powder and sauté on a medium flame for 1 minute.
  2. Add the carrots, rice, moong dal, salt and 2 cups of water, mix well and pressure cook for 2 whistles.
  3. Allow the steam to escape before opening the lid.
  4. Serve hot with fresh curds.
