- To make peanut ladoo, roast the raw peanuts in a broad non-stick pan for 6 minutes.
- Cool and de skin them
- Blend the peanuts in a mixer till coarse.
- Transfer the coarsely crushed peanut powder in a deep bowl, add the powdered sugar and cardamom powder and mix well.
- Add the melted ghee and mix very well.
- Divide the mixture into 14 equal portions and roll each portion into a ball.
- Serve or store the peanut ladoo in an air-tight container. Use as required.

Roast for 6 minutes or until they are light brown, the skin cracks and aromatic. You can also roast peanuts in a microwave on HIGH for 2 to 3 minutes at 1 minute intervals.
Transfer in a plate, cool completely so they turn crispy. De skin them by rubbing them between your palms.
Transfer the peanuts in a mixer jar.
Blend the peanuts till coarse. Oil releases from the peanuts and becomes like a paste. So just blitz it till coarse while pausing and checking.
Transfer the coarsely crushed peanut powder in a deep bowl.
Add powdered sugar. Instead of sugar you can make use of grated jaggery.
Add cardamom powder. There are many variations to peanut ladoo, here we have kept them plain but you can add other ingredients like dried fruits, sesame seeds or coconut.
Add melted ghee. You can skip adding ghee if the oil released from peanuts is enough to roll them.
Mix very well and our shengdana ladoo mixture is ready. Check for taste and add more sugar if needed.
Divide the groundnut laddu mixture into 14 equal portions.
Roll each portion into a ball and shenga unde is ready!
