Method

For broccoli, baby corn and zucchini salad
 

  1. For the honey orange dressing, in a small bowl mix honey, orange juice, basil leaves or mint leaves, dried oregano, extra virgin olive oil, lemon juice, sea salt and black pepper.
  2. Heat the oil in a broad non-stick pan, add the onions and garlic and sauté on a medium flame for 1 minute.
  3. Add mushrooms, broccoli florets, baby corn, zucchini, capsicum and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
  4. Transfer in a deep bowl, cool completely.
  5. Add the lettuce.
  6. Cover with a cling wrap and chill in the fridge till serving.
  7. Just before serving add the prepared honey orange dressing and toss well.
  8. Serve mushroom, broccoli, baby corn and zucchini salad immediately.
