1 1/4 cups grated dry coconut (kopra)
2 tbsp powdered flaxseeds (alsi)
2 1/2 tbsp cocoa powder
1/2 tbsp maple syrup or raw unpasteurized honey
1/2 cup desiccated coconut for rolling

  1. To make peanut butter coconut balls, combine all ingredients, except desiccated coconut in a large plate and mix very well.
  2. Divide the mixture into 11 equal portions and roll each portion into a round. Roll them in the desiccated coconut till they are evenly coated from all the sides.
  3. Refrigerate the peanut butter coconut balls for atleast 30 minutes.
  4. Store the peanut butter coconut balls in air-tight container in the fridge and use as required.

Being into fitness and eating healthy, i loved this recipe as its got all the good fat and protein and care is taken to use unsweetened cocoa powder. Every thing is healthy about this recipe and i have one or 2 peanut balls for dessert after dinner. Between my wife and me, we need to make this recipe on a weekly basis. It takes care of our little sugar cravings.
