One of the most famous of Maharashtrian recipes, Misal is a scrumptious cocktail of savouries and sprouts!

Wholesome and tasty sprouts are cooked with tangy tomatoes and pungent onions, not to forget the spice powders and the special coconut-onion based misal masala!

All of this is further enhanced with chivda, potatoes and other appropriate ingredients to make a sumptuous accompaniment for laddi pav.

The best part about Misal is that it suits breakfast, dinner and any other time you wish to have it.

Method

For the misal masala
 

  1. Heat the oil in a broad non-stick pan, add the onions and coconut and dry roast on a medium flame for 2 to 3 minutes.
  2. Add all the remaining ingredients and sauté on a medium flame for 3 to 4 minutes.
  3. Remove from the flame and allow it to cool completely.
  4. Once cooled, blend in a mixer to a smooth powder without using any water. Keep aside.


For the misal
 

  1. Heat the oil in a pressure cooker and add the cumin seeds.
  2. When the seeds crackle, add the onions and sauté on a medium flame for 1 to 2 minutes.
  3. Add the prepared misal masala and sauté on a medium flame for 1 more minute.
  4. Add the tomatoes, turmeric powder and a little water (approx. 1 tbsp), mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  5. Add the matki, safed vatana, moong and chawli sprouts and mix well.
  6. Add 2 cups of hot water and salt, mix well and pressure cook for 3 whistles.
  7. Allow the steam to escape before opening the lid.
  8. Add the chilli powder, 1/2 cup of water and coriander, mix well and simmer for 3 to 4 minutes, while stirring occasionally.


How to proceed to make misal pav
 

  1. Just before serving pour 1/4 of the misal in a serving bowl, sprinkle 2 tbsp of mixed farsaan,2 tbsp of batata poha, 2 tbsp of onions and 1 tbsp of coriander over it.
  2. Repeat with the remaining ingredients to make 3 more servings of misal.
  3. Serve misal immediately with laddi pavs and lemon wedges.

Misal Pav Or How To Make Misal Pav recipe with step by step photos

For the Misal Masala

 

    1. For the misal masala, heat the oil in a broad non-stick pan and add the onions.

    2. Add the coconut. Use only dry coconut as that is what gives the taste and flavour and it is easily available. It is known as kopra chi vati.

    3. Roast on a medium flame for 2 to 3 minutes. Make sure it doesn’t burn so do keep a check on it.

    4. Add the coriander seeds and cumin seeds. These are an essential for any maharashtrian masala powder.

    5. Add the whole spices - cloves, peppercorns and cinnamon.

    6. Now add the dry red chillies. These chillies will give the spice and most importantly the will give the nice red colour to this misal masala.

    7. Add the garlic cloves.

    8. Sauté on a medium flame for 3 to 4 minutes.

    9. Remove from the flame, transfer to a plate and allow it to cool completely.

    10. Once cooled, transfer the mixture into a blender jar. Since we don't have too much masala, we are going to use a small blender jar so it is easily blended.

    11. Blend in a mixer to a smooth powder without using any water. Keep aside.

For the Homemade Misal

 

    1. For the Homemade Misal, heat the oil in a pressure cooker and add the cumin seeds. Usually we add a lot of oil in misal but we have added very little. If you want, you can add 2 tbsps more to get a nice tarri (spicy gravy).

    2. Add the onions. This gives crunch and little sweetness.

    3. Sauté on a medium flame for 1 to 2 minutes.

    4. Add the prepared misal masala. If you are short on time you can use the readymade misal masala also.

    5. Sauté on a medium flame for 1 more minute.

    6. Add the tomatoes. Make sure to take the red and juicy variety of tomatoes.

    7. Add the turmeric powder and a little water (approx. 1 tbsp) to prevent the masala from burning.

    8. Mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.

    9. Add the matki sprouts. The matki is soaked overnight in enough water, then drained and tied in a muslin cloth to get sprouts, which will take approx. 12 hours.

    10. Similarly add the safed vatana. They are sprouted just like the matki.

    11. Also ad the sprouted moong. These sprout much faster than the others.

    12. Add the chawli sprouts. This can be avoided if you wish but Maharashtrians use all the sprouts, making it a delicious dish. If you do not have the time to soak and sprout them, they are easily available in the market.

    13. Add 2 cups of hot water and salt. Hot water makes it cook faster. One can heat the water on the gas or in a microwave.

    14.  Mix well and pressure cook for 3 whistles. 

    15. Allow the steam to escape naturally before opening the lid.

    16. Add the chilli powder. This will give an extra kick to the misal pav.

    17. Add 1/2 cup of water and coriander. Water will depend on how thin you want the misal to be, if you like it more thinner add more water.

    18. Mix well and simmer for 3 to 4 minutes, stirring it in between.

How to proceed for the Misal Pav

 

    1. To serve the Misal Pav, pour 1/4 of the homemade misal in a serving bowl. Make sure you stir it well before pouring it in a serving bowl.

    2. Sprinkle 2 tbsp of mixed farsaan over the misal, this is easily available in all the grocery stores. It gives a very nice crunch.

    3. Put 2 tbsp of batata poha evenly over it. This is optional but it does taste very good if added. Here is our recipe of Batata Poha, you can try that as well.

    4. Sprinkle 2 tbsp of onions evenly over it. If you do not like the taste of raw onions you can avoid it, but these raw onions gives it a nice crunch.

    5. Put 1 tbsp of coriander evenly over it.

    6. Repeat with the remaining ingredients to make 3 more servings of Misal Pav.

    7. Serve this Misal Pav immediately with laddi pavs and lemon wedges. If you wish to you can make laddi pavs at home as well. For that you can try our Homemade Laddi Pav Recipe.

Mumbai roadside Misal Pav

 

    1. We are showing you how Mumbai roadside Misal Pav is packed and looked. As in 2019, the cost of Misal pav is Rs 50. Misal costs Rs 10 and Rs 10 for the 2 single ladi pav.

    2. The Mumbai roadside Misal Pav constists of 4 items of which 3 items are packed in small plastic bags. The ladi pav, onions and cut lemon, usal and the toppings which are sev, ghatiya and papadi.

For Misal Masala, it is dry roast all ingredients or using oil? because it is written heat oil and then dry roast. also is it ok to use desiccated coconut?

this recipe is a winner. I tried it by doubling all quantities (do not double chilli powder if you don''t want a hole burned down your duodenum). it turned out exactly like it used to be in Mumbai in my growing up years!
