This chunky Mexican Tomato Sauce is an exciting combination of tomatoes and onions, flavoured with spice powders and herbs. It is used in baked dishes, and may even be served as a dips with nacho chips or other crunchies.

Mexican Tomato Sauce recipe - How to make Mexican Tomato Sauce

Ingredients

Main Ingredients

1 1/2 cups blanched and chopped tomatoes

1 tbsp oil

1/2 cup finely chopped onion

1 tsp finely chopped green chillies

1/2 tsp chilli powder

1/2 tsp dried oregano

2 pinches of sugar

salt to taste

Method

Heat the oil in a broad non-stick pan, add the onions and green chillies and sauté on a medium flame for 1 minute.
Add the tomatoes, chilli powder, oregano, sugar and salt, mix well and cook on a medium flame for 4 minutes, while stirring occasionally.
Use as required.

Using the original Mexican tomato or Tomatillo is as effective as using the diabetic medication Acarbose. Both can produce intestinal gas which can be solved by taking the digestive enzyme Alpha-galactosidase with the meal which raises blood sugar and calories too little to make any real difference. That enzyme solves the abdominal gas and discomfort problems that come with low glycemic fibrous fruits and vegetables. This is my thank you to you, Tarla Dalal.
