Hara Pulao recipe - How to make Hara Pulao



Preparation Time:    Cooking Time:    Total Time:     4Makes 4 servings

1 cup long grained rice (basmati)
250 gms chopped cauliflower
150 gms green peas
200 gms sliced potatoes
2 sticks of cinnamon (dalchini)
4 to 5 cloves (laung / lavang)
7 to 8 black peppercorns (kalimirch)
2 to 3 bayleaves
2 green cardamoms
2 onions , thinly sliced
2 green chillies , thinly sliced
4 tbsp oil
1/2 cup coriander (dhania) , grounded with 3 green chillies and 1 tsp ginger (adrak)
salt to taste
2 tsp garam masala
  1. Heat 1 tbsp of oil in a pan, add the bay leaves, cloves, cinnamon and black pepper and saute for 30 seconds.
  2. Add the onions and green chillies and saute till the onions turn pink in colour. Keep aside.
  3. Heat the remaining oil in a pan, add the vegetables and cook for 4-5 minutes.
  4. Add the prepared coriander paste and mix well.
  5. Add the fried onions, garam masala and salt, mix well and saute for 5 minutes.
  6. Add the rice and 2 cups of water and mix well.
  7. Cover and cook on a medium flame, til the rice is cooked.
  8. Serve hot.
