5 kgs chopped raw mango
2 kgs mustard (rai / sarson) oil
1 tbsp asafoetida (hing)
3 cups salt
1 1/4 cups turmeric powder (haldi)
1 1/4 cups coarsely grounded chilli powder
4 cups losely packed whole red chillies
2 cups fennel seeds (saunf) , coarsely grounded
1 1/2 cups fenugreek seeds (methi) , coarsely powdered
1 1/2 cups nigella seeds (kalonji)

  1. Heat the oil till the aroma is strong and begins to smart your eyes.
  2. Add the asafoetida to the oil;
  3. Then add the turmeric, coarsely ground redchillies, whole red chillies, fennel seeds, fenugreek seeds and onion seeds and mix well.
  4. Take the saucepan off heat and mix in the mango pieces and salt.
  5. When the mixture is cool, pack into a sterilised jar, and store.
  6. thispickle can be served after a couple of days.
  7. Keep pieces in jar covered with a layer of oil while in storage to prevent spoiling.
