Method
  1. Combine the sugar, vinegar, lemon juice and salt with ½ cup of water in a sauce pan, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  2. Add the ginger, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  3. Cool completely and store refrigerated in an air-tight glass container and use as required.

Sweet and sour ginger.. goes very well with fried rice and noodles.. gives a nice mild taste to the dish..
