For the Manchurian
1 carrot, chopped
a few cauliflower florets
1 potato, chopped
1/4 cup green peas
1/4 cup plain flour (maida)
1/4 cup cornflour
4 tbsp soy sauce
1 tsp green chilli paste
1 tbsp garlic (lehsun) paste
1 tbsp ginger (adrak) paste
salt and pepper to taste
oil for deep frying

For the sauce
4 to 6 green chillies, finely chopped
1 onion, chopped
4 to 6 red chillies
10 cloves garlic (lehsun), finely chopped
2 pcs ginger (adrak), finely chopped
1 1/2 tbsp cornflour
1 cup Vegetable Stock
1 to 2 tsp sugar
1 tbsp soy sauce
2 tbsp oil
salt to taste
2 tbsp wine

For the manchurian

  1. Boil all the vegetables , mash them and form into small balls and keep aside.
  2. Now mix all the rest of the ingredients for the manchurian and dip the balls in the mixture and deep fry themin hot oil.

For the sauce

  1. Heat a wok and add 2 tbsp oil fry the garlic ginger green and red chilies for 2 minutes,
  2. Now add the onion and fry for 2 more minutes. now add the stock, corn flour , soy sauce, salt and sugar and cook for 7 minutes.
  3. Remove from heat. just before serving reheat the sauce add the manchurian balls and wine and mix gently and serve.

  1. Use the same sauce and same recipe for the manchurian but instead of making balls dip the cauliflower florets or whole button mushrooms in the batter .
