Tava pulao, another quick treat off the Pav Bhaji cart is yet another popular street food of Mumbai.

This delicious pulao is prepared in advance by the vendor, and shares a place on the pav bhaji tawa. It is swiftly portioned out onto serving plates when the orders flow in, to appease the severest of hunger shots.

It is a famous street food at Juhu chowpatty and local pav bhaji counters all over Mumbai.

Tawa pulao is called so because it is cooked on the same tawa as Pav Bhaji, soaking up all the spicy flavours of the pav bhaji masala.

At home, you can use a broad pan to make this rice dish if you don’t have a huge tawa. Serve the tawa pulao with accompaniments like Raitas / Kachumber and roasted papad.

Tava Pulao, Tawa Pulao Recipe recipe with step by step photos

For cooking the long grained basmati rice

  1. For the Mumbai roadside tava pulao recipe, we will first rinse the rice under running water until the starch runs out and you get clear water. This helps in preventing the rice grain from sticking to each other after cooking.
  2. Soak ¾ cup of rice in enough water for 30 minutes.
  3. Drain well.
  4. Boil 4 cups of water in a deep pan.
  5. Add the soaked and drained rice and salt to taste.
  6. Add ½ tablespoon oil and mix well.
  7. Cook on a medium flame for 8 to 10 minutes or till the rice are 95% cooked. This will give you 2 ½ cups after cooking. Do not overcook the rice or else they will turn soft and mushy.
  8. Drain the water using a strainer. Also, you can refresh the rice with cold water to prevent further cooking.
  9. Transfer to a plate and allow it to cool for 2 to 3 hours.
  10. Just make sure to cover with a plate so that the top layer of rice doesn’t dry out.

For the spicy chilli garlic paste

  1. For the Mumbai style tawa pulao recipe, we will now make the homemade red chilli-garlic paste. For that remove the stem from 12-15 chillies.
  2. Soak the whole red chillies in enough hot water for atleast 30 minutes.
  3. Drain the chillies.
  4. Transfer the chillies to a small mixer grinder and add roughly chopped 1 tbsp of garlic.
  5. Add approx. ¼ cup of water.
  6. Blend in a mixer till smooth. Keep aside. This recipe makes around 0.5 cup of homemade chilli garlic paste.

  5. Add the capsicum, mix well and sauté on a medium flame for 2 more minutes. You can also add chopped and boiled carrots, French beans and cauliflower.
  6. Add the tomatoes, mix well and again cook on a medium flame for 3 to 4 minutes, while stirring occasionally.

The taste comes out just like the roadside stall. Make sure to add the cashew and peas towards the end to retain the slight crunch. My husband loves this recipe and I make it at least once a week! Tastes very good with plain curd.
