Children dot on cupcakes during christmas vacations. When the pineapple gets baked with rest of the ingredients the aroma that spreads around pulls children out of their sluggish winters and adds joy to their christmas afternoons.

Pineapple Cupcakes recipe - How to make Pineapple Cupcakes

For The Cupcakes
1 cup plain flour (maida)
1 1/2 tsp baking powder
a pinch of salt
2 tbsp powdered sugar
2 tsp pineapple essence
2 tsp lemon yellow colour
1/4 cup soft butter
2 slices tinned pineapple , finely chopped
reserved pineapple syrup as required

For Garnish
cinnamon (dalchini) powder
powdered sugar
tinned cherry
whipped cream
  1. Combine the plain flour, baking powder, salt and powdered sugar and sieve well.
  2. Transfer in a deep bowl and add the butter, pineapple syrup, pineapple pieces, lemon yellow colour and pineapple esssence and whisk well till smooth.
  3. Grease 6 flower shaped silicon moulds and fill 3/4 cup with batter.
  4. Spread evenly using spoon back.
  5. Bake in a pre-heated oven at 200 degree Celsius for 22 minutes or till cooked.
  6. Unmould and sprinkle cinnamon and white sugar powder using strainer.
  7. Place one cherry on each and top with whipped cream.
  8. Serve warm.
