Our Indian style apple muffins are eggless apple cinnamon muffins.
The eggless apple cinnamon muffin is so delicious, it will entice even those who are not very fond of apples. The fruity aroma of apples and the delicate smell of cinnamon fill the entire house with their magic even as these apple muffins bakes!
Notes on Indian style apple muffins. 1. Add baking soda. Baking soda helps in rising of the apple cinnamon muffins without the addition of eggs. 2. Add cinnamon powder. Make use of best quality cinnamon powder to get a rich, flavorful muffin. 3. We have used regular salted butter which will provide moistness to the eggless apple cinnamon muffin, you can use any variety of oil or unsalted butter. 4. Add the apples. Instead of chopping, you can even thickly grate the apples. Make sure the apples are ripe and red as they tend to be naturally sweet and will work best for the recipe. We are using unpeeled apples, the skin provides a good texture to the apple muffins.

Ingredients
For Apple Cinnamon Muffins
1 1/4 cups chopped apple
1/4 tsp cinnamon (dalchini) powder
1 cup whole wheat flour (gehun ka atta)
1/2 tsp baking soda
a pinch of salt
1/2 cup sugar
1/2 tsp vanilla essence
3 tbsp melted butter
1/2 tbsp vinegar
cinnamon (dalchini) powder for sprinkling
Method
For apple cinnamon muffins
To make eggless apple cinnamon muffin, sift the whole wheat flour, baking soda, cinnamon powder and pinch of salt in a deep bowl using a sieve and keep aside.
Heat a deep non-stick pan add ½ cup of water and sugar, mix well and cook on a medium flame for 2 minutes, while stirring continuously.
Switch off the flame, add the vanilla essence, butter, vinegar and mix well.
Add the sifted flour and 2 tbsp of water and mix gently using a whisk.
Add the apples and mix gently.
Place 9 paper cups in 9 muffin moulds in a muffin tray.
Drop spoonful of the batter into each muffin mould and tap it lightly.
Sprinkle little cinnamon powder on each muffin mould.
Bake in a pre-heated oven at 180°c (360°f) for 20 minutes or until a toothpick inserted in a muffin comes out clean.
Serve the apple cinnamon muffin warm.

To prepare eggless apple cinnamon muffin recipe | Indian style apple muffins | place a sieve on a deep bowl and add whole wheat flour.

Add baking soda. Baking soda helps in rising of the apple cinnamon muffins without the addition of eggs.

Add cinnamon powder. Make use of best quality cinnamon powder to get a rich, flavorful muffin.

Add a pinch of salt and sift everything together using a sieve and keep aside.

For wet ingredients for apple cinnamon muffins, heat a deep non-stick pan add ½ cup of water.

Add sugar.

Mix well and cook on a medium flame for 2 minutes, while stirring continuously.

Switch off the flame, add the vanilla essence.

Add butter. We have used regular salted butter which will provide moistness to the eggless apple cinnamon muffin, you can use any variety of oil or unsalted butter.

Add vinegar and mix well. You can even make use of lemon juice if vinegar is not available.

Add the sifted flour. For an added crunch, you can toss some chopped walnuts, pecans or almonds in the apple cinnamon muffins.

Add 2 tbsp of water.

Mix gently until everything is just combined using a whisk.

Add the apples. Instead of chopping, you can even thickly grate the apples. Make sure the apples are ripe and red as they tend to be naturally sweet and will work best for the recipe. We are using unpeeled apples, the skin provides a good texture to the apple muffins.

Mix gently and do not overmix as it will yield a rubbery muffin.

Place 9 paper cups in 9 muffin moulds in a muffin tray. This is easy to clean instead of greasing the muffin tray and adding the batter directly.

Drop a spoonful of the batter into each muffin mould. You can use an ice cream scoop so that each cup gets an equal quantity of batter.
- Tap it lightly.

Sprinkle little cinnamon powder on each muffin mould.

Bake in a pre-heated oven at 180°c (360°f) for 20 minutes or until a toothpick inserted in an eggless apple muffin comes out clean. Don’t overbake your muffins or else they will turn dry.
- Let the eggless apple cinnamon muffins | Indian style apple muffins | sit in the muffin tray for about 10-12 minutes before removing to serve.

Serve eggless apple cinnamon muffins warm. You can enjoy the eggless apple cinnamon muffins with apple sauce or as it is along with coffee/tea. I tried making but they didn''t turn out well they were uncooked from inside even after baking for 30 mins at 180deg

Hi Zahra, We have tried the recipe twice. Make sure the oven has been pre-heated well and the muffins are kept at the middle shelf and not lower shelf in the oven.

Hi Madge, yes you can. Use the same amoune i.e 1 cup of AP flour for the recipe.

I liked it since it was easy. But while I had pre heated the oven I still had to bake it for 20 min then another 5 and then another 5 at 200deg.. So is there anything I hv done wrong. And it was on the middle shelf

What is the difference between baking powder and baking soda? Are they same? If not, can baking soda be substituted by baking powder? Which are the best brands for baking soda and baking powder available in the market?

Hi Seema, baking powder and baking soda are two different ingredients.. Baking Soda -It is a white powder with crystalline grains, which is used as a leavening agent.It aids in leavening and tenderising. Baking Powder - It is a fine white powder, which is used as a leavening agent. That is, it helps dough, batter, etc., to rise well. baking soda is easily available in grocery stores, and baking powder is available in different brands like blue bird, weikfield etc..
