A toothsome broth of sautéed vegetables and oats cooked simply with water, and seasoned with salt and pepper. Comforting and sumptuous, this Oats and Vegetable Broth is very nutritious too. The vegetables provide an abundant supply of vitamin C, a powerful antioxidant that reduces free-radical damage, slowing the onset of heart diseases, cancer and other age-related degenerative diseases. By using fibre-rich oats, we do away with traditional refined flour thickeners, making this broth all the more healthier.

Oats and Vegetable Broth recipe - How to make Oats and Vegetable Broth

Preparation Time:    Cooking Time:    Total Time:     Makes 4 servings

Ingredients
1/2 cup quick cooking rolled oats
2 tbsp finely chopped tomatoes
2 tbsp finely chopped capsicum
2 tbsp finely chopped cauliflower
2 tbsp finely chopped carrots
2 tbsp finely chopped cabbage
2 tsp oil
1/4 cup finely chopped onions
2 tsp finely chopped garlic (lehsun)
1 tsp finely chopped green chillies
salt and freshly ground black pepper (kalimirch) to taste
2 tbsp finely chopped coriander (dhania)
1/4 cup finely chopped parsley
2 tsp lemon juice
Method
  1. Heat the oil in a deep non-stick pan, add the onions, garlic and green chillies and sauté on a medium flame for 1 minute.
  2. Add all the vegetables and sauté on a medium flame for another 2 minutes.
  3. Add the oats and sauté on a medium flame for 1 more minute.
  4. Add 3 cups of hot water, salt and pepper, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  5. Add the coriander and parsley, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  6. Add the lemon juice and mix well.
  7. Serve immediately.

%age of carbohydrates is on higher side in comparison to protein and fibre which isn''t perfect for diabetics.

Tarla Dalal    Dear Jasbir - 9.3 gm of carbohydrate is fine to be added in a diabetics diet, especially when that little carbohydrate is from oats which is also a good source of fibre and it aids in controlling blood sugar levels.

Perfect Winter Recipe...oats added gives that nice thickness to the soup...Crunch of vegetables is like a limelight of this recipe...full of fibre and vitamins...
