A bouquet of finely chopped vegetables is combined with mayonnaise, laced with tobasco sauce, and placed between buttered bread slices. The vegetable mayonnaise sandwich is scrumptious and healthy, loaded with the goodness of veggies.

8 bread slices , lightly buttered

To Be Mixed Into A Spread
1 cup finely chopped celery
1 cup grated raw carrot
1/2 cup thinly sliced radish (mooli)
1/4 cup finely chopped capsicum
1/4 cup mayonnaise
1/4 tsp tabasco sauce
salt and to taste

  1. Apply a generous layer of the spread on a slice of bread.
  2. Sprinkle with salt and freshly ground pepper.
  3. Sandwich with another slice of bread.
  4. Repeat with the remaining bread slices and spread to make 3 more sandwiches.
  5. Serve immediately.
