Russian salad sandwich is a cold sandwich that is perfect for hot summer afternoons. The chopped pineapple contrasts well with the remaining ingredients, and adds a crispy, tangy feel to the sandwich. Use freshly-crushed pepper for best flavour and aroma.

Ingredients


For The Russian Salad
3/4 cup chopped and boiled mixed vegetables
(carrots , green peas and
french beans)
1/2 cup readymade mayonnaise
2 tbsp fresh cream
1/4 cup canned and chopped pineapple
1/4 cup boiled , peeled and chopped potatoes
salt and to taste

Other Ingredients
8 bread slices
butter for spreading

For Serving
tomato ketchup
potato wafers

Method
For the russian salad

  1. Combine the mixed vegetables, mayonnaise, fresh cream, pineapple, potatoes, pepper and salt in a bowl and mix well.
  2. Divide the russian salad into 4 equal portions and keep aside.

How to proceed

  1. Place 2 bread slices on a clean, dry surface and apply a little butter on each bread slice.
  2. Put 1 portion of the prepared russian salad in the centre of 1 buttered bread slice and spread it evenly using a back of the spoon.
  3. Cover with another buttered bread side facing downwards. Cut the sandwich into 2 triangles.
  4. Repeat steps 1 to 3 to make 3 more sandwiches.
  5. Serve immediately with tomato ketchup and potato wafers.

I made this recipe and it was great.. the creaminess of cream and mayonnaise added to the vegetables makes it fab...the pineapple gives a nice sweetness to this sandwich...
