1. What is Indian-style Sour Cream?

Indian-style sour cream is a quick, homemade version made using fresh cream, lemon juice, and salt. The lemon juice provides the characteristic tanginess, while refrigeration helps the mixture become thick sour cream. Since it uses common Indian ingredients, it's convenient for wraps, dips, and fusion dishes.

2. How is this Sour Cream made?

This version requires only 3 ingredients: 3/4 cup fresh cream, 1½ tbsp lemon juice, and salt. When whisked well, the acid in lemon juice slightly thickens and sours the cream, producing a texture perfect for Mexican food, Indian wraps, and dips. Resting it in the fridge for 3–4 hours is key for a smooth, creamy finish.

3. Uses in Wraps & Mexican Food

This homemade sour cream works beautifully in tortillas, tacos, burritos, nachos, quesadillas, and Mexican bowlsbecause of its cooling, tangy flavor. It also makes an excellent spread for wraps, shawarmas, frankies, and rolls, helping add moisture and richness without overpowering the filling.

4. How to use Sour Cream in Indian Recipes

Sour cream can enhance many Indian dishes thanks to its cooling acidity and creamy texture. You can use it in:

  • Kebabs and tikkas as a topping or dip (instead of mayonnaise or yogurt).
  • Parathas (spread inside paneer paratha, aloo paratha, or rajma wrap).
  • Chaats like sev puri, nacho chaat, rajma chaat.
  • Curries, added at the end for richness—like methi malai, creamy paneer gravies, or veg makhani (use small amounts to prevent curdling).
  • Biryani and pulao bowls as a cooling condiment.

5. Storage, Shelf Life & Freezing

Store your sour cream in an airtight container, mason jar, or glass jar in the refrigerator. It stays fresh for up to 7 days. Avoid leaving it at room temperature. You should not freeze sour cream because freezing alters its texture, making it watery or grainy once thawed.

6. Tips for Smooth, Thick Sour Cream

Ensure there are no lumps while whisking. The lemon juice must be mixed thoroughly to create an even sourness. For a thicker version, use high-fat fresh cream, refrigerate longer, or whisk again after chilling. This results in the perfect thick sour cream for both Indian and Mexican dishes.

Since, it contains only 18-25% milk fat , you cannot use it as whipping cream(which contains almost 35% milk fat). The thick and glossy fresh cream with silken texture suits both sweet and savoury dishes. Commercially available fresh cream is best used to flavor soups, curries, fruit desserts because of the dense richness it adds to the texture of the recipe.
