Method

For the vegetable medley
 

  1. Heat the oil in a broad non-stick pan, add the spring onions whites and sauté on a medium flame for 1 minute.
  2. Add the ginger and chilli powder and sauté on a slow flame for 1 minute.
  3. Then add the tomatoes and tomato ketchup, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  4. Add the vegetables, spring onions greens, sugar, salt and ½ cup of water, mix well and cook on a medium flame for 5 minutes, while stirring occasionally. Keep aside.


How to proceed
 

  1. Place the rice noodles on a serving plate and top with the vegetable medley.
  2. Serve hot garnished with coriander.
