Cumin seeds, known as jeera in Hindi, are an essential spice in Indian cooking, lending their warm, earthy aroma and slightly bitter, nutty flavor to a wide array of dishes. From everyday dals to rich curries and fragrant rice preparations like jeera rice, cumin is a foundational spice that subtly enhances the overall taste without overpowering other ingredients. A classic recipe using cumin seeds is tadka dal, where whole cumin seeds are tempered in hot ghee or oil until they sizzle and release their aroma, then poured over cooked lentils. Another popular dish is aloo jeera—a dry potato stir-fry seasoned with cumin seeds, turmeric, and green chilies, showcasing how cumin can transform simple ingredients into something deeply flavorful.
