  2. Add the cumin seeds, mustard seeds, fenugreek seeds and saunf and sauté for 10 seconds.

  5. Add kaddu, tomatoes, salt, 1 cup water and mix well.
  6. Cover and cook for 10 minutes, stirring occasionally.
  7. Add amchur, sugar, mix well and cook on medium heat for 3 minutes, stirring occasionally.
  8. Serve the pumpkin dry vegetable hot garnished with coriander.

  15. Add 1/2 cup chopped tomatoes.
  16. Add salt to taste. We added 1/2 tsp salt.
  17. Add 1 cup of water.
  18. Mix well.
  19. Cover and cook for 10 minutes, stirring occasionally.
  20. Sabzi after cooking 90%.
  21. Add 1/2 tsp dried mango powder (amchur).
  22. Add 1 tsp sugar. The little sugar we add  balances the spices in the recipe.
  23. Mix well.
  24. Cook on medium heat for 3 minutes, stirring occasionally.

  3. Add the cumin seeds, fennel seeds, coriander powder, chilli powder and 2 tsp of water, mix well and cook on a medium flame for 10 seconds, while stirring continuously.
  4. Add the onions, ginger paste and 2 tsp of water, mix well and cook on a medium flame for 2 to 3 minutes, while stirring continuously.
  5. Add the red pumpkin, sugar, salt, turmeric powder and ¾ cup of water and mix well. Cover it with a lid and cook on a medium flame for 8 to 10 minutes, while stirring occasionally.
  6. Add the dry mango powder, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  7. Serve hot.

Very simple but tasty... A perfect balance of all the masalas makes this subzi a daily fare to be enjoyed with hot phulkas. Low in calories so can be enjoyed by weight watchers.
