For mushroom masala
 

  1. To make mushroom masala recipe, heat 1 tbsp oil in a broad non stick pan, add the sliced mushrooms, salt and pepper powder to taste.
  2. Sauté on a medium flame for 3 to 4 minutes and keep aside.
  3. Heat 1 tbsp oil in a deep pan, add cinnamon, black cardamom, cumin seeds, green chilli and onions.
  4. Sauté on a medium flame for 2 to 3 minutes. Add ginger-garlic paste and sauté for a minute.
  5. Add tomato pulp, curd, turmeric powder, chilli powder, coriander cumin seeds powder, kashmiri chilli powder, garam masala and powdered cashew nut.
  6. Mix well and cover and cook on a medium flame for 3 to 4 minutes until the oil is released.
  7. Add the sautéed mushrooms, salt to taste and ½ cup hot water. Mix well.
  8. Cover and cook on a medium flame for 8 minutes, while stirring occasionally.
  9. Serve mushroom masala hot.

I just love mushrooms!!! I wanted to make something for my brother from mushrooms but quick too...This turned out to be too good..I loved the addition of kasuri methi to it..Adding sugar covered up for the sourness of tomato puree and curd..
