Ingredients

For Minty Cucumber Cooler
1/2 cup chopped mint leaves (phudina)
3 cups chopped cucumber
1 1/2 cups low fat curds (dahi)
salt to taste

For Serving
1/2 cup crushed ice

For The Garnish
4 tbsp finely chopped cucumber
Method

  1. To make minty cucumber cooler, combine the cucumber along with ½ cup of water in a deep pan and cook on a medium flame till it turns soft (approx. 4 to 5 minutes). Keep aside to cool.
  2. Once cooled, combine the cucumber (with the remaining water) and mint leaves in a mixer and blend till smooth.
  3. Transfer the mixture in a deep bowl, add the curds and salt, mix well and keep aside.
  4. Place some crushed ice in 4 individual glasses and pour equal quantities of the juice over it. Serve the minty cucumber cooler immediately garnished with cucumber.

Method To Make Minty Cucumber Cooler

  1. To make Minty Cucumber Cooler, take 2-3 medium sized cucumber. Cucumbers are high in nutrients and also aid in weight loss. 
  2. Peel the cucumbers. 
  3. Further, chop the cucumbers for Minty Cucumber Cooler and keep aside.
  4. Take a bunch of fresh mint leaves, separate the leaves from the stem.
  5. Wash the leaves and keep aside. Always wash the mint leaves before use as it may contain traces of dirt and bacteria. 
  6. In a deep non-stick pan, take 1/2 cup of water and let it boil.
  7. Once you see small bubbles showing up in the water, add the chopped cucumber to it.
  8. Cook the cucumbers till they are soft, it would take approx. 4-5 minutes.
  9. Once the cucumbers turn soft, get the pan off the flame and keep aside until it totally cools down.
  10. Once the cucumbers come down to room temperature, in a mixing jar put the cucumbers with the left out water.
  11. Add the mint leaves. Mint leaves would make the drink delicious.
  12. Blend the cucumber and mint leaves until smooth. 
  13. Transfer the mixture in a deep bowl. 
  14. Add low fat curd to Mint Cucumber Drink
  15. Add salt to taste mint cucumber drink.
  16. Mix the Minty Cucumber Cooler well.
  17. Place some crushed ice in 4 individual glasses and pour equal quantities of the Mint Cucumber Cooler over it. 
  18. Serve the Minty Cucumber Cooler Immediately.

Water filled cucumber, curds and mint pair really well.... the image of the recipe itself is too tempting...kudos to the team... have this is a mid-evening snack and you will be surely satiated.
