Cut the karela crosswise and lengthwise. You will now have four pieces of bitter gourd.
Scoop out the seeds from each piece using a spoon and discard them.
Place the clean outer green flesh of karela flat-side down on the cutting board. Chop them roughly and keep aside.
Transfer the deseeded and roughly chopped bitter gourd to a mixer jar. If you have a juicer, you may use this instead of the mixer jar. Simply, add water, lemon juice, salt at the end and skip the step of straining the mixture.
Add ½ cup of water in the mixer. Water can be increased if you want a more diluted karela juice. Also, you can replace water with any juice you like.
Blend the karela till smooth.
Place a sieve on a bowl and strain the mixture. Add ½ cup of water and strain to get the karela juice. Press with the help of a spoon over the mixture to strain out as much bitter gourd juice as possible. Check the concentration and add more water to adjust the consistency and texture.
Add the lemon juice. Additionally, you can even add black salt and turmeric powder to the bitter gourd juice recipe. If diabetic, then do not add honey but, it can be added to reduce the bitterness from karela.
Add the salt.
