Ingredients

To Be Mixed Into A Stuffing For Mexican Dosa
1 cup readymade baked beans
1/4 cup finely chopped spring onions whites and greens
1/4 cup finely chopped capsicum
1 tsp chilli powder
1 tbsp tomato ketchup
1 tbsp red chilli sauce
1/2 tsp cumin seeds (jeera) powder
salt to taste

1 1/2 cups dosa batter
6 tsp butter for cooking
12 tbsp grated processed cheese
Method

  1. To make the mexican dosa, divide the stuffing into 6 equal portions. Keep aside.
  2. Heat a non-stick tava (griddle), sprinkle a little water on it (it should sizzle immediately) and wipe off using a piece of cloth.
  3. Pour a ladleful of the batter (approx. ¼ cup) on the tava (griddle) and spread in a circular motion to make a 150 mm. (6”) diameter circle.
  4. Spread 1 tsp of butter over it and cook on a medium flame till it turns slightly crisp and golden brown in colour.
  5. Place one portion of the stuffng in a row in the center and sprinkle 2 tbsp of cheese evenly over it. And fold it over from both the sides overlapping each other.
  6. Repeat steps 2 to 5 to make 5 more dosas.
  7. Serve the mexican dosa immediately.

Tips to get the perfect Mexican dosa

  1. Tips to get the perfect Mexican dosa
    • To get crispier dosas, you can add some rice flour to the batter and mix well.
    • The dosa batter should be at room temperature always. So if you have stored the batter in the refrigerator, remove it and keep outside at least half an hour before making the dosas.
    • Also, you can add 1 tsp of sugar to the dosa batter to get perfectly brown dosa.
    • You can even make dosa batter at home, refer our recipe  to learn homemade dosa batter recipe.
    • Also if you are an amateur, before making the dosas, season the tava. Grease the tava uniformly with very little oil or butter. Now sprinkle the water and wipe it off. The fat layer will form a protective layer which will prevent the dosa from sticking to the tava.
    • If you are finding it difficult to scrape out the dosa from the pan once it's ready, you can avoid it, by rubbing some raw onion to the pan before pouring the batter. This gives a non-sticky effect to the pan!

For the Mexican dosa stuffing :

  1. For preparing the Mexican dosa stuffing, in a deep bowl, take 1 cup of readymade baked beans. If you don’t wish to buy baked beans, then you can try this homemade refried beans recipe to make the Mexican dosas.
     

  2. Add both spring onions whites and greens. Don’t limit yourself to these vegetables. You can even put corn kernels, grated carrots etc to the stuffing.
  3. Add finely chopped capsicum. You can even toss in finely chopped bell peppers to make the stuffing more colorful.
  4. Add chilli powder. Alternatively, you can add finely chopped green chillies. The quantity can be adjusted as per the level of spice you can handle.
  5. Add the tomato ketchup and chilli sauce. The ketchup balances the flavor of the Mexican dosa stuffing with it’s tangy flavor.
  6. Add cumin seeds powder. This can be avoided.
  7. Add salt as per taste.
  8. Mix well and your stuffing for the Mexican Dosa is ready!
  9. Divide the stuffing into 6 equal portions. Keep aside.

How to make Mexican Dosa :

  1. Before making the Mexican Dosa, taste a drop of batter to check the seasoning. Also, we are making use of readymade dosa batter which might be thick so, adjust the consistency of the batter accordingly.
  2. Heat a non-stick tava (griddle), sprinkle a little water on it (it should sizzle immediately).
  3. Wipe off using a piece of cloth. When you pour the batter, the tava should not be very hot or else you won’t be able to spread the dosa nicely so, sprinkle water to lower the temperature of the tava and wipe the water with a cloth.
  4. Pour a ladleful of the batter (approx. ¼ cup) on the tava (griddle). If your tava is yet very hot, remove the tava from the flame and then spread the batter.
  5. Spread in a circular motion to make a 150 mm. (6”) diameter circle.
  6. Spread 1 tsp of butter over it. You can even make use of oil or desi ghee.
  7. Cook on a medium flame till it turns slightly crisp and golden brown in colour.
  8. Place one portion of the Mexican stuffing in a row in the center.
  9. Sprinkle 2 tbsp of cheese evenly over it.  Substitute processed cheese with mozzarella or cheddar cheese to get a stringy effect.
  10. And fold it over from both the sides overlapping each other.
  11. Repeat steps 2 to 10 to make 5 more Mexican Dosas.
  12. Serve the Mexican Dosas immediately.

Mexican Dosa.. a different style dosa.. wich has a very saucy taste to it.. i loved the thos version of dosa.. Must try for all the dosa lovers..
