kolhapuri bhadang recipe | spicy Maharashtrian kurmura | Maharashtrian bhadang  jar, travel, snack | with 18 amazing images.

The Kolhapuri Bhadang recipe is a famous spicy Maharashtrian kurmura preparation known for its bold, punchy garlic flavor. This Maharashtrian bhadang is a beloved Indian jar snack that offers the perfect crunch for anytime munching or as a reliable travel snack.

To make Kolhapuri Bhadang, heat oil in a deep pan and sauté peanuts until they are perfectly crisp. Add a generous amount of garlic and sauté until fragrant and golden. Next, stir in curry leaves, turmeric powder, and asafoetida (hing). A key step in this recipe is to switch off the flame before adding the red chilli powder and salt to prevent the spices from burning. Finally, toss in the murmura (puffed rice) and cook on a slow flame, stirring continuously to ensure every grain is coated in the spicy, aromatic tempering.

The charm of this spicy Maharashtrian kurmura lies in its textures; the melt-in-the-mouth murmura contrasts beautifully with the crunchy peanuts. The heavy use of crushed garlic provides a deep aroma and a sharp taste that defines the authentic Kolhapuri style.

This Indian jar snack is highly versatile. Enjoy it plain, or elevate it into a fresh bhel by adding a squeeze of lemon juice, grated carrots, or raw mango. Because it is both filling and lightweight, it is the ideal travel companion.

Tips for Authentic Kolhapuri Bhadang

  • Garlic Prep: For the most traditional flavor, use plenty of crushed garlic rather than sliced.
  • Spice Adjustment: While red chilli powder gives it a signature fiery red color, it can be replaced with green chillies for a different kind of heat.
  • Storage: Allow the chivda to cool completely before moving it to an air-tight container. When stored properly, it remains fresh and crisp for up to 10 days.
