  3. Add asafoetida and sauté on a medium flame for 30 seconds.
  4. Add garlic.
  5. Add ginger.
  6. Add green chillies.
  7. Add red chillies. Break the dried red chilies before adding to the pan for more heat.
  8. Mix well and sauté on a medium flame for 1 minute or until the raw flavours are gone.
  9. Add the potatoes. We have boiled the potatoes in the microwave, peeled and chopped them into cubes before adding to make the aloo palak sabzi quickly. You can even add raw potato cubes and cook them in the pan if you have time. You can replace potatoes with sweet potatoes.
  10. Toss gently and cook on a medium flame for 5 minutes, while stirring occasionally.
  11. Add the spinach. Another way of preparing the aloo palak is by preparing a spinach gravy similar to what we make for palak paneer and replace the cottage cheese with baby potatoes or cubes of aloo. You can also shallow fry or deep fry the potatoes before adding in the spinach gravy. Spinach can be replaced with fenugreek leaves to make aloo methi.
  12. Add coriander powder. We have not used any garam masala in this recipe to get natural flavors of aloo and palak.
  13. Add turmeric powder. The aloo palak recipe makes use of minimal spices that are easily available in our masala dabba.
  14. Add salt.
  15. Mix well and cook on a medium flame 3 minutes, while stirring occasionally. Do not overcook the leafy greens, so simply stir-fry palak for a while.
  16. Serve aloo palak | Punjabi style aloo palak sabzi | aloo palak sukhi sabzi | hot with chapati or roti.
