Moong dal panki, green moong is another versatile ingredient, used to make dhoklas, pankis, chilas, handvo etc. Here is a recipe that proves this point. This easily digestible snack is sure to please your stomach, without any after-effects! remember to remove the skin of the dal for a better texture and taste. Also, you could increase the amount of besan if the batter is too thin.

Ingredients

1 cup yellow moong dal (split yellow gram)
2 tbsp fresh curds (dahi)
2 green chillies , roughly chopped
2 tsp besan (bengal gram flour)
a pinch asafoetida (hing)
2 tbsp chopped coriander (dhania)
a pinch sugar
1 tsp lemon juice
salt to taste
4 to 6 banana leaves (kele ka patta) ,
cut into 125 mm. (5") diameter circles
oil for greasing and cooking

Method
  1. Clean and soak the moong dal in enough water for 2 to 3 hours. Wash thoroughly and drain.
  2. Add the curds, green chillies and 2 tbsp of water (add more if required) blend in a mixer till smooth.
  3. Add the besan, asafoetida, coriander, sugar, lemon juice and salt and mix well.
  4. Apply a little oil on one side of each banana leaf and keep aside.
  5. Put 2 tbsp of the batter on the greased side of a banana leaf and spread it evenly to make a thin layer.
  6. Cover with another banana leaf with the greased side over the batter.
  7. Cook on a non-stick pan or a tava (griddle) using oil till light brown spots appear on the leaves and the panki in between peels off the leaf easily.
  8. Repeat with the remaining ingredients to make 7 more pankis. Serve immediately.

Handy tip:

  1. If you do not have a cookie cutter for cutting the banana leaves into circles, cut them in squares and proceed as per the recipe.
