3/4 cup Mexican Green Sauce
For the spinach filling
2 1/4 cups finely chopped spinach (palak)
100 gms crumbled paneer (cottage cheese)
1 tbsp butter
salt to taste
For the baking
3 tbsp grated processed cheese
Method
For the filling
- Heat the butter and fry the onion for 1 minute.
- Add the spinach and green chilli and fry again for 2 minutes.
- Add the cottage cheese and salt.
How to proceed
- Fill the crepes with the spinach mixture and fold each one into a triangle.
- Arrange in a baking dish and pour the Mexican green sauce over them.
- Sprinkle the cheese on top and bake in a hot oven at 200 degree C (400 degree F) for 20 minutes.
- Serve hot.

To make the Spinach Crepes filling for Spinach Crepes, heat 1 tbsp. butter in a broad non-stick pan.

Add the chopped onion and fry on a medium flame for 1 minute.

Add the 2 1/4 cups finely chopped spinach (palak) and 1 chopped green chillies and fry again for 2 minutes.

Add the 100 gms crumbled paneer (cottage cheese) and salt to taste. mix well.

Excellent dish , absolutely relished It took one hour to prepare but worth hard work. Ate with herbs toast.

This recipe taste fab with tortillas stuffed with spinach filling in a Mexican Green sauce.
