Collection of rotis, puris and parathas | different rotis, pooris and paratha from across India | A variety of tasty flat breads are made in India, to be served as part of lunch or dinner, and sometimes as breakfast too. A roti is cooked on a tava or on an open flame, while a puri is deep-fried.

On the other hand, a paratha is a category of Indian bread that is stuffed or spiced-up. Across the country, each community has its favourite type of flat bread and indigenous ways of making them. Rotis, puris and parathas are usually had with sabzis and dals or with accompaniments like curds and pickles.

Gujarati roti recipe. The most common of all roti's in a Gujarati household is the phulka or lovingly called as Rotli in Gujarati. Traditionally rotlis are cooked on a tava and later put on direct flame for it to rise and puff. A drizzle of ghee or oil is the finishing touch given to this light on stomach flatbread.

Maharashtrian roti recipes. During one of my visit to Konkan beaches like Harihareshwar and Diveagar, I came across Maharashtrian Ghavan. Ghavan is a thick, spongy pancake similar to neer dosa made using rice flour.

Add salt to the ingredient of the papaya masala just before rolling the parathas as it would make the filling soggy and it would be easier to roll.
