For Bhindi Raita
2 cups chopped ladies finger (bhindi)
2 cups whisked curds (dahi)
1/2 tsp cumin seeds (jeera) powder
1/2 tsp chilli powder
1/4 tsp black salt (sanchal)
salt to taste
oil for deep frying

For The Garnish
1 tbsp finely chopped coriander (dhania)

  1. To make bhindi raita, heat the oil in a deep non-stick pan and deep-fry the ladies finger, on a medium flame till they turn crisp and golden brown in colour. Drain on an absorbent paper and keep aside.
  2. Just before serving, combine all the remaining ingredients in a deep bowl, add the deep-fried ladies finger and mix well.
  3. Serve the bhindi raita immediately garnished with coriander.
