An essential recipe for those who love Oriental cuisine, the Chinese-style Hot Garlic Sauce is a very garlicky and spicy sauce that is sure to set your palate on fire!
It can be used as an accompaniment, or used in cooking – such as to coat fried Manchurian balls, sauté deep-fried potatoes, etc. It tends to get thick over time, so add a little water and adjust the consistency according to the requirement.
You can also try other Chinese accompaniments like the Green Garlic Sauce or Schezwan Sauce .
- Combine the cornflour and ¾ cup of water in a bowl and mix very well. Keep aside.
- Heat the oil in a broad non-stick pan, add the garlic, ginger and green chillies and sauté on a medium flame for 30 seconds.
- Add the spring onions, schezuan sauce, chilli sauce, soy sauce mix well and cook on a medium flame for 1 minute, while stirring occasionally.
- Add the cornflour-water mixture and salt, mix well and cook on a medium flame for 1 minute, while stirring continuously. Use as required.
