Dal Kachori recipe - How to make Dal Kachori

For The Dough
1 kg plain flour (maida)
1 pinch baking soda
salt to taste
1 tbsp carom seeds (ajwain)
2 tbsp oil
warm water to knead the dough

For The Filling
150 gms urad dal (split black lentils)
100 gms chana dal (split bengal gram)
2 tsp fennel seeds (saunf)
1 pinch asafoetida (hing)
1/2 tsp turmeric powder (haldi)
1 tsp red chilli powder
1/2 tsp coriander (dhania) powder
1/2 tsp dried mango powder (amchur)
1/2 cup chopped coriander (dhania)
oil for frying
black salt (sanchal) to taste
chaat masala (optional)
For The Dough

    For The Dough
  1. Combine all the ingredients in a bowl, mix well and knead the dough using adequate quantity of oil and water.
  2. The dough should be soft to touch.
  3. Make small round balls.
  4. Make it flat using your palm and fingers.
  5. Keep aside.

For The Filling

    For The Filling
  1. Soak the chana dal and urad dal for 1 hour.
  2. Drain the water and blend in a mixer to a coarse paste.
  3. Heat some oil in a kadhai, add the dal mixture and saute for approx. 10 minutes till it becomes brown.
  4. Remove the dal mixture onto a dish and add all the remaining ingredients and mix well.
  5. Keep aside.

How to proceed

  1. Fill small portions of the dal mixture in the maida balls to make the kachori.
  2. Deep fry the kachoris in hot oil till crisp and golden brown.
  3. drain on an absorbent paper.
  4. Serve with tea.
