Ingredients

For The Dough
1 cup whole wheat flour (gehun ka atta)
1/4 cup plain flour (maida)
salt to taste
1 tsp oil for kneading
whole wheat flour (gehun ka atta) for rolling

1 cup grated cauliflower
1/4 cup finely chopped onions
1/2 cup diced mozzarella cheese
1 tsp ginger (adrak)
1 tsp finely chopped green chillies
2 tbsp finely chopped coriander (dhania)
1 tsp chaat masala
salt and freshly ground black pepper (kalimirch) to taste

For the dough

  1. Combine the whole wheat flour, plain flour, salt and oil in a deep bowl.
  2. Knead into a soft dough using ¾ cup of water. Cover the dough with a lid and keep aside.

  1. To make cheesy cauliflower paratha, in a small bowl add wheat flour and approx. 5 tbsp of water and whisk well to make a thick paste. Keep aside.
  2. Divide the dough into 6 equal portions.
  3. Roll a portion of the dough into a 220 mm. (9 inch) diameter circle using a little whole wheat flour for rolling.
  4. Place a portion of the cheesy cauliflower stuffing in the centre of the circle.
  5. Fold 2 opposite corners of the circle over the filling, overlapping them slightly.
  6. Now apply little prepared wheat flour paste using a brush. Now fold the remaining 2 sides of the circle to seal the stuffing well and form an envelope.
  7. Heat a non-stick tava (griddle) and cook the paratha, using 1 tsp butter, till golden brown spots appear on both the sides.
  8. Repeat steps 3 to 7 to make 5 more parathas.
  9. Serve cheesy cauliflower paratha immediately.
