Panchamel khichadi, this nutritious khichadi consist of 4 dals and rice pressure cooked with a generous helping of veggies. Mildly spiced khichadi which can be had as a stand alone lunch or dinner.

Ingredients

1 1/2 cups long grained rice (basmati)
1 tbsp masoor dal (split red lentil)
1 tbsp chana dal (split bengal gram)
1 tbsp yellow moong dal (split yellow gram)
1 tbsp toovar (arhar) dal
1 tsp cumin seeds (jeera)
1 tsp garlic (lehsun) , finely chopped
1 tsp grated ginger (adrak)
1/4 cup onions , cut into cubes
1/2 cup cabbage , cut into cubes
3/4 cup cauliflower , cut into florets
1/2 cup potatoes , peeled and chopped
1/2 cup green peas
1 tsp chilli powder
1/4 tsp turmeric powder (haldi)
2 tsp coriander (dhania) powder
1/2 cup tomatoes , chopped
2 tbsp ghee
salt to taste

Method
  1. Clean, wash and soak the rice and dals for approx. 15 minutes. Drain and keep aside.
  2. Heat the ghee in a pressure cooker and add the cumin seeds.
  3. When the seeds crackle, add the garlic and ginger and sauté for 1 minute.
  4. Add the onions and sauté till the onions turn translucent.
  5. Add the cabbage, cauliflower, potatoes and peas and sauté for some time.
  6. Add the chilli powder, turmeric powder, coriander powder and stir again.
  7. Add the tomatoes and sauté for some more time.
  8. Add the rice and dals, 3 cups of hot water and salt and pressure cook for 2 whistles.
  9. Allow the steam to escape before opening.
  10. Serve hot.
