Eggless Lemon Souffle recipe - How to make Eggless Lemon Souffle

Preparation Time:    Cooking Time:    Total Time:     Makes 4 servings

2 cups water
10 gms chopped agar-agar soaked in water for 30 minutes
1/4 cup lemon juice
1/4 cup sugar
1 cup fresh cream , chilled
  1. Combine agar-agar and water in a pan and cook till the china grass dissolves.
  2. Add sugar and cook a little more.
  3. Take the pan off the heat, add the lemon juice and mix well. Keep aside to cool.
  4. While the agar-agar cools and begins to set, whip the chilled cream (has to be chilled other wise it will curdle), till it holds its shape.
  5. Fold in the cream into the cooled agar-agar mixture, transfer on to a serving bowl, chill and serve.

May I know what cream it is?

Tarla Dalal    Hi Kenix, This is a member contributed recipe.. the cream used here is the whipping cream.. which is used for deserts..
