Sprouts and Apple On Toast | healthy sprouts and curd topping toast |  curd celery sprouts spring onions toast |

Sprouts and Apple on Toast is a delightful and healthy breakfast option that perfectly balances taste, nutrition, and freshness. Made using 2 toasted whole wheat bread slices, this recipe is topped with a creamy and crunchy mixture of low-fat curds (dahi), alfalfa sprouts, grated apples, celery, and spring onions, flavored with mustard powder, salt, and pepper. It’s quick to make, light on the stomach, and rich in essential nutrients — making it an ideal choice for a wholesome breakfast or evening snack.

To prepare the healthy sprouts and curd topping, mix together ¼ cup low-fat curds, ½ cup alfalfa sprouts, ¼ cup grated apples, 1 tbsp finely chopped celery (ajmoda), 2 tbsp chopped spring onion whites, ½ tsp mustard (rai/sarson) powder, and a pinch of salt and pepper. Stir well until everything blends into a creamy yet crunchy topping. This mixture brings together the creaminess of curd, the fresh crunch of sprouts, and the sweet-tangy flavor of apple, creating a refreshing combination of textures and tastes.

Once the topping is ready, divide it into two equal portions and spread it evenly on the toasted bread slices. The crispness of the whole wheat toast complements the softness of the curd mixture beautifully. Serve the toasts immediately, while they are still warm and crunchy. You can garnish them with a few extra sprouts or chopped herbsfor a more appealing presentation.

This curd, celery, sprouts, and spring onion toast is a power-packed breakfast option, offering protein from the curd and sprouts, fibre from the apples and whole wheat bread, and essential minerals from the vegetables. The mustard powder adds a subtle pungent flavor that enhances the overall taste, while black pepper provides a light kick and helps with digestion. It’s a perfect example of how simple ingredients can come together to make a nutritious and satisfying meal.

One of the best parts about this recipe is its versatility. While the Creamy Alfalfa Sprouts and Apple on Toast is the original version, you can easily replace alfalfa sprouts with bean sprouts or mixed sprouts based on availability. You can also experiment with toppings like grated carrots, cucumber, or finely chopped capsicum for added crunch and color. This makes it a great choice for busy mornings when you want something quick, healthy, and filling without compromising on taste.

In the Indian context, where bread toasts and sandwiches are popular breakfast staples, this recipe gives a nutritious twist to the traditional toast. It’s perfect for health-conscious individuals looking to include more probiotics, fibre, and plant-based protein in their diet. Whether served with a glass of fresh juice or a cup of tea, Sprouts and Apple on Toaststands out as a simple, creative, and wholesome meal that combines Indian ingredients with a touch of international flair.

It's a delicious, simple and healthy sandwich. The recipe says toasted bread but might also taste good on an untoasted bread. The topping is light, tasty and fresh.
