The Valor Papdi nu Shak is a homely and tasty winter subzi, which tastes great with chapatis. Fresh and juicy valor papdi is cooked with a traditional tempering of mustard seeds, and flavoured with a mix of taste-givers like garlic paste and green chilli paste.

Coconut adds to the taste of this subzi and also gives it a nice mouth-feel. Serve it hot with chapatis right off the tava. This is one of the most comforting combinations for a cold winter’s day!

Valor Papdi Nu Shak, Winter Sabzi recipe - How to make Valor Papdi Nu Shak, Winter Sabzi

2 1/2 cups chopped valor papdi
3 tbsp freshly grated coconut
4 tbsp finely chopped coriander (dhania)
1 tsp garlic (lehsun) paste
2 tsp green chilli paste
2 tsp sugar
salt to taste
1 1/2 tbsp oil
1/2 tsp mustard seeds ( rai / sarson)
1/4 tsp asafoetida (hing)
a pinch of baking soda
1 tsp lemon juice

For Serving
  1. Combine the coconut, coriander, garlic paste, green chilli paste, sugar and salt in a bowl, mix well and keep aside.
  2. Heat the oil in a broad non-stick pan, add mustard seeds and asafoetida and sauté on a medium flame for 30 seconds.
  3. Add the valor papdi and baking soda, cover with a lid and cook on a medium flame for 5 to 7 minutes, while stirring occasionally.
  4. Add the coconut-coriander mixture, mix gently and cook on a medium flame for 2 minutes while stirring occasionally.
  5. Add the lemon juice and mix well.
  6. Serve hot with chapatis.

I did try it. Its tasty but I would prefer not to put coconut as I have cholesterol problem

I tried the papdi with vegan without sugar & coconut. It was really delicious. Lime juice add good punch.

I simply loved this recipe. It''s attractive green colour, fresh coconut and other ingredients added, just make it a perfect subzi.

I love this walor subzi, the taste of valor papdi along with sugar lemon juice and spice taste perfect with kadhi and puris, I often make this on sundays for lunch for my family.
