For the potato skins:
4 big potatoes , parboiled
2 tbsp butter
salt and black pepper (kalimirch) powder to taste

For the rice filling
1 cup Steamed Rice
1/4 cup mixed vegetables
1 small onion , chopped
1 chopped green chilli
1 tsp oil
1 tsp garlic (lehsun) paste
1 tbsp tomato ketchup
1 tbsp coriander (dhania) leaves
a pinch of garam masala
salt and black pepper (kalimirch) powder to taste

grated processed cheese

  1. cut the potatoes into two,and scoop the center,chop it and keep it with the mixed veggies for the filling.
  2. Apply butter to the potato skins and arrange in the baking tray,bake in the oven for 10 - 15 mins at 250 degrees (500 f)

  1. in a pan heat the oil and add the mixed veggies and potato mixtureand all other ingredients, mix well and cook over medium flame for 2 to 3 minutes.
  2. Remove and keep aside.
  3. How to proceed
  4. fill each of the potato skins with the rice mixture,top with some cheese and a dollop of butter, place on a greased baking tray and grill for 5 to 10 minutes or till the cheese melts.
  5. Serve hot with tomato sauce
