Ingredients

For Cheese Aloo Moong Toast
8 bread slices
4 tsp butter for spreading
4 tsp green chutney
12 tomato slices
8 sliced onions
1 tsp butter for brushing
2 tsp butter for cooking
8 tbsp grated processed cheese

For The Stuffing
1/2 cup boiled and mashed potatoes
1/2 cup boiled moong (whole green gram)
1/4 cup finely chopped onions
1/4 cup finely chopped capsicum
1 tsp chilli powder
1/2 tsp chaat masala
1 tsp lemon juice
salt to taste

For Serving With Cheese Aloo Moong Toast

Method

For the stuffing

    For the stuffing
  1. Combine all the ingredients in a deep bowl and mix very well.
  2. Divide the mixture into 4 portions and keep aside.

For making the cheese aloo moong toast

    For making the cheese aloo moong toast
  1. Place 2 bread slices on a clean, dry surface. Apply ½ tsp of butter and ½ tsp of green chutney on each bread slice.
  2. Spread a portion of the mixture on one buttered-chutney bread slice and arrange 3 tomato slices and 2 onion slices evenly over it.
  3. Cover it with another slice of bread, with the buttered-chutney side facing downwards and press it lightly. Spread ¼ tsp of butter evenly over it.
  4. Grease a sandwich toaster on both the sides using ½ tsp of butter, place the sandwich in the sandwich toaster and cook on a medium flame, till it turns brown and crisp from both the sides.
  5. Sprinkle 2 tbsp of cheese evenly over it.
  6. Cut into 6 equal pieces using a sharp knife.
  7. Repeat steps 1 to 6 to make 3 more toasts.
  8. Serve the cheese aloo moong toast immediately with tomato ketchup and green chutney.

For the stuffing of the Cheese Aloo Moong Toast

  1. Take the boiled and mashed potato and clean, deep mixing bowl.
  2. To this, add the boiled moong. We have used moong in this recipe as it is very healthy. You can read the health benefits of moong on our website.
  3. Now add the finely chopped onions.
  4. Add the finely chopped capsicum. You can even use other vegetables like carrots if you wish.
  5. Add the chilli powder to the bowl. This will add a little spice to the Cheese aloo moong toast.
  6. Now add the chaat masala for a zingy taste. You can buy the readymade chaat masala or make chaat masala at home.
  7. Finally add the Lemon juice and salt and mix very well. We use cooked moong and potatoes in this toast sandwich because they will not get cooked while making the sandwich and you cannot have them raw.

How to proceed for the Cheese Aloo Moong Toast

  1. Place 2 bread slices on a clean, dry surface.
  2. Apply ½ tsp of butter on each bread slice.
  3. Also apply ½ tsp of green chutney on each bread slice.
  4. Spread one portion of the mixture on one buttered-chutney bread slice.
  5. Arrange 3 tomato slices over it.
  6. Also place 2 onion slices over the tomatoes. You can avoid the vegetables altogether and just toast the filling.
  7. Cover it with the other slice of bread, with the buttered-chutney side facing downwards and press it lightly so that the filling does not fall out.
  8. Spread ¼ tsp of butter evenly over it to ensure proper cooking of the toast.
  9. Grease a sandwich toaster on both the sides using ½ tsp of butter. If you don’t grease the toaster, the Cheese Aloo Moong Toast or sandwich  will not cook properly and might burn.
  10. Carefully place the sandwich in the sandwich toaster and close it.
  11. Cook the sandwich on a medium flame, till it turns brown and crisp from both the sides. Since you can't see the sandwich, open the toaster once or twice in between to keep checking on it to see how well it is cooked.
  12. Remove from the toaster and sprinkle 2 tbsp of cheese evenly over the hot Cheese Aloo Moong Toast. If you aren’t a fan of moong, you can even make a Veg Toast Sandwich.
  13. Repeat steps 1 to 12 to make 3 more Cheese Aloo Moong Toasts.
  14. Serve Cheese Aloo Moong Toast immediately with homemade tomato ketchup and green chutney.
