Tilwale Aloo, also known as Til Aloo Sabzi or Sesame Baby Potatoes, is a wonderfully simple yet incredibly flavorful Indian potato dish. This quick and easy recipe transforms humble boiled and peeled baby potatoesinto a delightful side or light meal, coated in a nutty, spicy, and tangy blend. It's a perfect example of how a few key ingredients can come together to create a truly satisfying and memorable experience.

 

The preparation begins with creating an aromatic tempering. In a broad non-stick pan, 1 tablespoon of oil is heated. Once shimmering, 1/4 teaspoon of cumin seeds (jeera), 1/4 teaspoon of mustard seeds (rai/sarson), and 4 to 6 curry leaves (kadi patta) are added. These are allowed to crackle, releasing their distinct fragrances and setting the stage for the flavors to come. The sputtering of the mustard seeds and the crackling of the curry leaves are tell-tale signs that the tempering is ready.

 

Following the initial tempering, 2 teaspoons of ginger-green chilli paste are introduced to the pan. This paste provides a fresh, pungent, and spicy kick to the dish. It's sautéed on a medium flame for just a few seconds, allowing its raw aroma to mellow slightly and its flavors to infuse into the oil without burning. This step is crucial for building the dish's vibrant taste profile.

 

Next, the star of the show – 1 1/2 cups of boiled and peeled baby potatoes – are added to the pan. Along with the potatoes, 1/4 teaspoon of turmeric powder (haldi) is added for its earthy color and subtle flavor, and salt to taste seasons the dish. The potatoes are then sautéed on a medium flame for 4 to 5 minutes. This sautéing helps the potatoes absorb the flavors of the spices and develop a slightly crisp exterior, adding to the dish's appealing texture.

 

Once the potatoes have been sufficiently sautéed, the pan is removed from the flame. This is when the magic ingredient, 2 tablespoons of roasted sesame seeds (til), is stirred in. Adding them off the flame preserves their nutty crunch and prevents them from burning. A final touch of tanginess comes from 1 teaspoon of lemon juice, which brightens the overall flavor of the dish, cutting through the richness and adding a zesty finish. Everything is mixed well to ensure the potatoes are evenly coated.

 

Tilwale Aloo is best served hot, allowing the warm flavors to truly shine. A garnish of 1 tablespoon of chopped coriander (dhania) not only adds a pop of fresh green color but also a burst of herbaceous aroma.   4. Remove from the flame, add the sesame seeds and lemon juice and mix well. Serve hot garnished with coriander.
