Method


 

  1. Combine all the ingredients in a deep bowl and knead into a soft dough using enough water.
  2. Divide the dough into 10 equal portions and roll out each portion into a 150 mm. (6") diameter circle using a little whole wheat flour for rolling.
  3. Heat a non-stick tava (griddle) and cook each khakhra on a slow flame till pink spots appear on both the sides.
  4. Grease the khakhra with 1/4 tsp oil on each side and continue cooking it on a slow flame, while pressing with a folded muslin cloth or a khakhra press, till it turns crisp and brown from both the sides.
  5. Cool completely and serve or store in an air-tight container and use as required.

I just love the way you combine a bundle of healthy ingredients to make a delicacy. These multi nutrient khakhras are too pleasing to the palate and I often carry them to work to much on during the day.
