To make minty couscous, clean and wash the couscous thoroughly. Combine the couscous and milk in a deep non-stick pan, mix well and cook on a medium flame for 8 to 10 minutes or till it is tender. Keep aside to cool slightly. Combine all the ingredients, including the cooked couscous, in a deep bowl and mix gently. Refrigerate for at least half an hour. Serve lemon mint couscous chilled.

Making Indian style couscous

  2. Add 1/2 cup couscous. If you wish, at this stage use broken wheat (dalia) instead as the taste will be the same.
  3. Mix well.
  4. Cook on a medium flame for 3 to 4 minutes or till it is tender. This is the image taken at 2 minutes. We still need to cook. If you want you can use broken wheat instead but that will take 8 to 10 minutes to cook. 
  5. This is the image taken at 3 minutes and the couscous is come to boiling point. We still need to cook a bit but make the flame on low now.
  6. This is the image taken at 4 minutes. We had reduced the flame from medium to low once the couscous had reached boiling point.  Your couscous is ready. Keep stirring a bit off the flame to prevent the couscous from sticking. 
  7. Keep aside to cool slightly. Mix gently and we see that we need to add a bit of water as the couscous has dried out. So add 2 tablespoons water.
  8. Mix the water in gently and the couscouss will get moist and separate.
  9. In a deep bowl put the cooked couscous.
  10. Add 2 tbsp chopped mint leaves (phudina).
  11. Add 1/2 cup chopped tomatoes.
  12. Add 1/2 cup chopped spring onions.
  13. Add 1/4 cup chopped coriander (dhania).
  14. Add 2 tsp olive oil.
  15. Add 2 tsp lemon juice.
  16. Add salt to taste.
