Cauliflower Paneer Lifafa Paratha: The Envelope Delight
The Cauliflower Paneer Lifafa Paratha is a soft and scrumptious Indian flatbread that captivates with both its taste and presentation. Also known as Stuffed Gobi Paneer Lifafa Paratha, this dish is shaped beautifully as envelopes (lifafa), which neatly hold a sumptuous filling inside them. They are a pretty sight to behold and are sure to make you drool! This particular recipe is packed with an ever-popular and nutritious combination of cauliflower and paneer, perked up with fresh spices and herbs.
Preparing the Soft Dough
The base for the Cauliflower Paneer Lifafa Paratha requires a specific dough blend to ensure a soft final texture that folds well. In a deep bowl, combine 1 cup whole wheat flour (gehun ka atta) and 1 cup plain flour (maida). This combination provides both the fiber of whole wheat and the elasticity of maida. Add salt to taste and 1 tsp oil for kneading. Knead into a soft dough using enough water. Once ready, divide the dough into 7 equal portions and keep them aside.
Crafting the Savory, Spiced Stuffing
The filling is the heart of this "envelope." It is a savory mixture featuring 1 cup grated paneer (cottage cheese) and 1 cup grated cauliflower. To enhance the flavor, mix in 41 cup finely chopped onion, 121 tsp finely chopped green chillies, and 2 tbsp finely chopped coriander (dhania). The spices include 41 tsp garam masala, 1 tsp chaat masala, and freshly ground black pepper (kalimirch). Season with salt to taste. Mix all these ingredients well, then divide the stuffing into 7 equal portions and keep them aside.
Shaping the Unique Lifafa (Envelope)
The envelope shaping technique is what gives the cauliflower paneer lifafa its name. First, roll a dough portion into a thin, large circle, about 225 mm. (9") diameter, using a little plain flour for rolling. Place one portion of the stuffing in the center of the circle. To seal the paratha, first fold 2 opposite corners of the roti over the filling, overlapping them slightly. Then, fold the remaining 2 sides towards the center to seal the stuffing well, resulting in a neat, square envelope.
Sealing and Cooking to Perfection
To ensure the stuffing is completely locked in, a sealing paste is used. In a small bowl, mix 2 tbsp plain flour with about 41 cup of water to make a thick paste. Though the recipe does not explicitly use this paste in the steps, applying it to the edges before folding (a crucial pro tip) helps seal the envelope. Next, heat a non-stick tava (griddle) and cook the paratha on a slow flame. Use 21 tsp butter to cook each paratha until they are golden brown in colour from both the sides and perfectly crisp.
Serving a Wholesome Meal
Repeat the rolling and cooking process to make the remaining 6 more cauliflower paneer lifafa parathas. Since they are best enjoyed hot and fresh, serve the paratha immediately. These stuffed gobi paneer lifafa parathas are very nutritious and wholesome. Enjoy them with a dollop of butter, raita, or chutney for a satisfying and fulfilling meal. You can also customize the filling by adding diced mozzarella cheese or finely chopped coloured capsicum for enhanced flavor and mouthfeel.

-
In a deep bowl 1 cup grated paneer (cottage cheese).
-
Add 1 cup grated cauliflower. Cauliflower has a mild, slightly sweet, and earthy flavor that pairs well with the savory taste of paneer (Indian cottage cheese). This creates a well-rounded and interesting flavor profile in the paratha filling.
-
Add ¼ cup finely chopped onions. Onions release moisture while cooking, which helps to prevent the stuffing from becoming dry and crumbly. Finely chopped onions can introduce a very slight textural variation within the stuffing.
-
Add 1½ tsp finely chopped green chillies. Green chillies add a touch of heat to the paratha, but in a more subtle way compared to red chilli powder.
-
Add 2 tbsp finely chopped coriander (dhania). Coriander leaves add a bright, fresh, and slightly citrusy flavor profile to the paratha filling.
-
Add salt to taste. We added 1/2 tsp salt.
-
Add freshly ground black pepper to taste. We added 1/4 tsp kalimirch.
